PROBLEM TO BE SOLVED: To provide konjak effectively utilizing food industrial waste, by mixing a food residue with konjak.SOLUTION: Konjak is obtained by: dispersing a food residue comprising squeezed food at 10-30% ratio based on water mixing and stirring konjak refined flour at 2-5% ratio based on water in water where the food residue is dispersed swelling the konjak refined flour and mixing a calcium hydroxide aqueous solution with the swollen konjak flour followed by coagulating and heat processing.COPYRIGHT: (C)2016,JPO&INPIT【課題】コンニャクに食品残渣を混合して、食品の産業廃棄物を有効利用したコンニャクを提供する。【解決手段】搾汁された食物からなる食品残渣を水に対して10~30%の割合で分散させ、水に対して2~5%のコンニャク精粉を前記食品残渣が分散された水中に混合撹拌し、コンニャク精粉を膨潤させ、その後、水酸化カルシウム水溶液を前記膨潤したコンニャク糊中に混合して凝固させ、加熱処理して得られるコンニャクを提供することにより、前記課題を解決する。【選択図】図1
