PROBLEM TO BE SOLVED: To clarify constituents of ethanol-soluble components in a solution obtained by removing the undecomposed high-molecular weight fraction abundant in hydrophobic amino acids in a treated liquid (decomposition liquid) obtained by treatment of a soybean protein with a protease, and to clarify usefulness of the constituents.SOLUTION: A peptide prepared from an aqueous solution, obtained by treating a soybean protein material with a protease and removing the undecomposed high-molecular weight fraction abundant in insoluble hydrophobic amino acids, is a Trp-containing polypeptide having a specific amino acid sequence and has inhibiting activities on an angiotensin I-converting enzyme (ACE) and suppressing actions on deterioration in human erythrocyte deformability, and is formulated into a drug effective composition to be used as a raw material of a health food and a medicine resulting in broadening of applications of soybeans.COPYRIGHT: (C)2014,JPO&INPIT【課題】 大豆蛋白質のプロテアーゼで処理による処理液(分解液)中の、疎水性アミノ酸の豊富な未分解の高分子画分を除去した、溶液におけるエタノール溶解分の成分を明らかにし、さらにはその有益性を明らかにすることを目的とする。【解決手段】 大豆蛋白原料をプロテアーゼで処理し、不溶の疎水性アミノ酸の豊富な未分解の高分子画分を除去した水溶液から調製されたペプチドが、特定のアミノ酸配列を有するTrp含有ポリペプチドであって、アンギオテンシンI変換酵素(ACE)阻害活性とヒト赤血球変形能低下抑制作用を有するもので、薬効性組成物とし、健康食品や医薬の原料として利用され、大豆の用途を大とするものである。【選択図】 図1
