PROBLEM TO BE SOLVED: To provide a seasoning reducing salt, calorie of foodstuff, especially meat processed food, without impairing flavor, palate feeling even reducing salt or fat. SOLUTION: The invention relates to the seasoning for salt and/or calorie reduction of foodstuff wherein the seasoning contains a solid or semi-solid flavor oil as an active ingredient obtained by heating a mixture comprising 1-10 pts.wt. of yeast extract processed seasoning obtained by heating an aqueous solution or water suspension comprising yeast extract containing 5'-nucleotide, glutathione containing yeast extract, monosaccharides, dextrin and kitchen salt, 100 pts.wt. of an edible solid fat, and 0.3-5 pts.wt. of water.
