The present invention relates to a method for producing cheonggukjang (fermented soybeans) with an increased menaquinone-7 content, the cheonggukjang with an increased menaquinone-7 content produced by the same method, and a healthy functional food composition containing the cheonggukjang for preventing and alleviating osteoporosis. The present invention provides the method for producing the cheonggukjang with a markedly increased menaquinone-7 content by optimizing fermentation time, the amount of a carbon source to be added, and the amount of bacteria to be inoculated. The cheonggukjang with an increased menaquinone-7 content can be effectively used as healthy functional food for preventing and alleviating osteoporosis.본 발명은 메나퀴논-7(menaquinone-7)의 함량이 증가된 청국장의 제조방법, 상기 방법에 의해 제조된 메나퀴논-7의 함량이 증가된 청국장 및 상기 청국장을 포함하는 골다공증 예방 또는 개선용 건강기능식품 조성물에 관한 것으로, 본 발명의 메나퀴논-7의 함량이 증가된 청국장은 골다공증 예방 또는 개선에 유용한 건강기능식품으로 유용하게 사용될 수 있다.
