The present invention relates to a method of maintaining the freshness of cut lotus root, which comprises a step of immersing lotus root in purified water； a step of processing the lotus root with heat at a first heat treatment temperature for a first heat treatment time； and a step of removing purified water remaining on the surface of the lotus root, wherein the first heat treatment temperature is 30°；C or higher and 80°；C or less, and the first heat treatment time is 30 seconds or more and one minute or less. According to the present invention, the heat processed lotus root has an improved quality and effects capable of a long term storage and preservation.
