The present utility model relates in general to a process for the production of mixed vacuum-fried fruit chips and products thereof. More specifically, the present utility model relates to a process for the production of mixed vacuum-fried fruit chips formulated from equal combination of vacuum-fried banana, jackfruit and sweet potato chips. According to this utility model, the vacuum-fried banana, jackfruit and sweet potato chips are prepared by vacuum frying banana, jackfruit and sweet potato chips under reduced frying temperatures of less than 100øC in coconut oil.
