A method of extracting water from at least one coconut comprising successively the following operations: - marking (D) of a cutting line (15) on the coconut (1), this cutting line ( 15) defining a cap (15a)； - separation (F) of the cap (15a) of the rest of the coconut (1) by cutting substantially along the line of section (15)； - Harvesting (H) water contained in the coconut (1) with the delivery of water through a pipe (4) opening into a container (5). In addition, all or part of said operations are performed under controlled atmosphere. Procédé d'extraction de l'eau d'au moins une noix de coco comprenant successivement les opérations suivantes : - marquage (D) d'une ligne de coupe (15) sur la noix de coco (1), cette ligne de coupe (15) définissant une calotte (15a) ； - séparation (F) de la calotte (15a) du reste de la noix de coco (1) par découpe suivant sensiblement la ligne de coupe (15) ； - récolte (H) de l'eau contenue dans la noix de coco (1) avec acheminement de l'eau au travers d'une canalisation (4) débouchant dans un contenant (5). En outre, tout ou partie desdites opérations sont effectuées sous atmosphère contrôlée.
