A coagulating agent for filled tofu (filled soybean curd), which comprises a water-in-oil-type emulsion composition in which aqueous phases each containing magnesium chloride are emulsion-dispersed in an oily phase, wherein polyglycerin condensed ricinolate and a phospholipid are contained as emulsifying agents in the coagulating agent for filled tofu, and the contents of magnesium chloride and the phospholipid in the coagulating agent for filled tofu are 14.0 to 26.0% by mass and 0.1 to 1.6% by mass, respectively.本發明係一種填充豆腐用凝固劑,其係包含使含有氯化鎂之水相乳化分散於油相中而成之油中水型乳化組合物者,且 該填充豆腐用凝固劑含有聚甘油縮合蓖麻醇酸酯與磷脂質作為乳化劑, 該填充豆腐用凝固劑中,氯化鎂之含量為14.0~26.0質量%,磷脂質之含量為0.1~1.6質量%。
