1. A plant-based food product containing at least 50 wt.% Protein, in which the protein is gluten or protein material derived from gluten, and in which the product has the structure of minced meat. The food product of claim 1, wherein the gluten is wheat gluten, barley gluten, rice gluten or rye gluten. 3. A food product according to claim 1 or 2, further comprising one or more of starch, flour and bran. 4. A food product according to claim 1 or 2, further comprising a meat flavoring, preferably a vegetable based meat flavoring. A method of manufacturing a plant-based food product, comprising: (a) reacting the gluten-containing plant material in solid form with water for 12 to 48 hours at a pH below 5; (b) heat treating the plant material at a temperature and for a time sufficient for sterilization of plant material; (c) cooling and subsequent mixing of the plant material with mold and incubation of the mixture to obtain a fermented product and (d) processing the fermented product into a food product a staple base in which the plant material contains gluten in an amount of at least 50 wt.%, preferably at least 70 wt.%, more preferably at least 75 wt.%.
