The present invention relates to a preparation method of dried peach, comprising the steps of: spraying a calcium chloride solution on peaches then post-aging the result; removing the peels of the peaches then dipping the peaches in a grapefruit extract; dipping the result in a sugar liquid containing sorbitol and ascorbic acid; and drying the result with hot air.본 발명은 복숭아에 염화칼슘 용액을 분무하여 후숙시킨 후, 복숭아 껍질을 제거하고 자몽 추출물에 침지시키고, 그 후 솔비톨 및 아스코르브산을 포함하는 당액에 침지시키고 열풍 건조시켜 복숭아 건조 식품을 제조하는 방법에 대한 것이다.
