The present invention relates to tofu using purple sweet potato acetic ferment and deep sea water as coagulants, and a production method thereof. More specifically, a soybean is finely crushed, and thus full soymilk is produced. Then, a coagulant is added thereto, and thus tofu is produced. At this time, the coagulant is a mixture of deep sea water and purple sweet potato acetic ferment produced by performing acetic fermentation on a purple sweet potato. In addition, purple sweet potato powder is added to and mixed with full soymilk obtained by finely crushing soybeans. The tofu produced according to the present invention contains a large quantity of anthocyanine components of a purple sweet potato and edible fibers of soybeans and a purple sweet potato, and thus has improved nutritional values. A liver function improving activity is also excellent, and consumer palatability is improved. According to the present invention, purple sweet potato acetic ferment and deep sea water are used as natural coagulants, and thus tofu which is safe from harmful components such as alcohol and heavy metals due to conventional chemical coagulants can be produced.본 발명은 자색고구마 초산발효액과 해양심층수를 응고제로 하는 두부 및 그 제조방법에 관한 것으로서, 보다 구체적으로는 대두를 미세하게 마쇄하여 전두유를 제조하여 응고제를 첨가하여 두부를 제조하고, 이 때, 응고제는 자색고구마를 초산발효시켜 제조한 자색고구마 초산발효액과 해양심층수를 혼합한 것을 이용하여 두부를 제조하는 것에 관한 것이다. 또한 대두를 미세하게 마쇄한 전두유에 자색고구마 분말을 첨가하여 혼합한 뒤, 자색고구마 초산발효액과 해양심층수를 혼합하여 이를 응고제로 이용하여 두부를 제조하는 것이다. 본 발명에 의해 제조된 두부는 자색고구마 및 대두의 식이섬유와 자색고구마의 안토시아닌 성분을 다량 함유하고 있어 영양 가치가 향상되고, 간기능 개선 활성 또한 우수하며, 소비자 기호도가 향상되며, 자색고구마 초산발효액과 해양심층수를 천연응고제로 사용함에 따라, 기존의 화학응고제로 인한 중금속 및 알코올 등 유해성분으로부터 안전한 두부를 제조할 수 있다는 장점이 있다.
