The present invention relates to a method of manufacturing a cereal branproduct containing beta-glucan.According to the method, a plastic mass is formed from cereal bran by means ofa thermo-mechanical treatment, and the mass is broughtinto contact with an enzyme that breaks up beta-ghican, with or without anenzyme that breaks up starch. After inactivating theenzyme, the bran is dried and, when so needed, ground. The cereal bran productmanufactured according to the method has anessen-tially inextensible structure in a water environment. The product issuitable to be added to aqueous foodstuffs or to foodstuffs, themanufacture of which employs water.
