The present invention relates to a method for manufacturing a functional red pepper paste comprising medicinal plants and a red pepper paste comprising medicinal plants, manufactured by the method, wherein the method comprises steps of: adding water to a compound in which a Saururus chinensis powder, an Agrimonia pilosa powder, and a Cudrania tricuspidata branch are mixed, and then extracting the same to manufacture a medicinal plant extract； manufacturing a medicinal plant powder by mixing a Sargassum fusiforme powder, a Pyrola japonica powder, a Paeonia japonica powder, and a Coptis chinensis powder； mixing rice glutinous flour to a malt mix extract which is obtained by mixing the medicinal plant extract and a beet extract with a malt powder followed by leaving and filtering the same, and then heating the same to manufacture glutinous rice starch； and mixing the manufactured glutinous rice starch and the manufactured medicinal plant powder with starch syrup, a fermented soybean lump powder, a red pepper powder, and salt, followed by aging the same. The red pepper paste manufactured by the method of the present invention is superior in taste and flavor as compared to existing red pepper paste.본 발명은 삼백초 분말, 선학초 분말 및 꾸지뽕 가지를 혼합한 혼합물에 물을 첨가한 후 추출하여 약용식물 추출액을 제조하는 단계； 톳 분말, 노루발풀 분말, 백작약 분말 및 황련 분말을 혼합하여 약용식물 분말을 제조하는 단계； 엿기름 분말에 상기 약용식물 추출액과 비트 추출액을 혼합하여 방치하고 걸러낸 엿기름 혼합추출액에 찹쌀가루를 혼합한 후 가열하여 찹쌀풀을 제조하는 단계； 및 상기 제조한 찹쌀풀 및 상기 제조한 약용식물 분말과 물엿, 메줏가루, 고춧가루 및 소금을 혼합하여 숙성시키는 단계를 포함하여 제조하는 것을 특징으로 하는 약용식물을 함유하는 고추장의 제조방법 및 상기 방법으로 제조된 약용식물을 함유하는 고추장에 관한 것이다.
