<;P>;PROBLEM TO BE SOLVED: To provide a method for producing compost where the reduction of odor generated in the process of composting organic waste such as the dung and urine of the live stocks can be efficiently realized at a low cost. <;P>;SOLUTION: The sediment of organic waste is mixed with electron acceptor water obtained by microbiologically treating waste water comprising organic matter, and also comprising a nitrate and a sulfate. The electron acceptor water is composed of supernatant water obtained by subjecting waste water comprising organic matter to low aeration treatment and thereafter keeping the same. Alternatively, the electron acceptor water is composed of supernatant water obtained by performing aeration under the conditions satisfying a dissolved oxygen content of 0 to 3 mg/L and an oxygen-reduction potential of 0 to 300 mV and thereafter keeping the same.
