PROBLEM TO BE SOLVED: To provide a defoaming agent effectively inhibiting the foaming when producing a foodstuff, and also having a lasting defoaming effect.
SOLUTION: The defoaming agent is made of an emulsion having an average particle diameter of 0.1 to 0.5 &mum, and the emulsion contains (A) an emulsifying agent having an HLB of 2 to 8, and (B) at least one kind selected from a polyglycerol fatty acid ester, lecithin, and a sucrose fatty acid ester.
