In an anchovy processing apparatus, moribund caught anchovies received from a refrigerating apparatus which cools the caught anchovies transported from a fishing ship to a processing ship to a first temperature to make the anchovies into a moribund state, are stored in an anchovy receiving part and boil cooked. The anchovy processing apparatus according to an embodiment of the present invention comprises: a moving part which moves the anchovy receiving part from an input part to an output part； a guide part which guides a moving path of the anchovy receiving part moved by the moving part； and a boil cooking part which is disposed on the moving path and boil cooks the moribund caught anchovies received in the anchovy receiving part, wherein the anchovy processing apparatus can complete the boil-cooking while the shapes of moribund caught anchovies are maintained.본 발명의 일 실시예에 따른 멸치 가공장치는, 어획선으로부터 가공선으로 운반된 어획된 멸치를 제1 온도로 냉각하여 활동성이 없는 빈사 상태로 만드는 냉동장치로부터 상기 빈사 상태의 어획된 멸치를 전달받아 멸치수용부에 수용하고, 자숙하는 멸치 가공장치에 있어서, 투입구로부터 배출구로 상기 멸치수용부를 이동시키는 이동부, 상기 이동부를 통해 이동되는 상기 멸치수용부의 이동 경로를 가이드하는 가이드부 및 상기 이동 경로 상에 배치되어 상기 멸치수용부에 수용된 상기 빈사 상태의 어획된 멸치를 자숙하는 자숙부를 포함하며, 상기 멸치 가공장치는, 상기 빈사 상태의 어획된 멸치의 형태가 유지된 채, 상기 자숙이 완료되도록 할 수 있다.
