The present invention relates to a method of preparing a physiological active substance-enhanced fermented soybean and the physiological active substance-enhanced fermented soybean prepared by the method. The present invention provides a method of preparing a fermented soybean which enhances contents of physiological active substances such as γ-aminobutyric acid, isoflavone and others, and has antioxidant activity by germinating gemmule of soybean, steaming the germinated gemmule of soybean, introducing lactic acid bacteria into the steamed germinated gemmule of soybean, and fermenting the lactic acid bacteria-introduced steamed germinated gemmule of soybean, and a fermented soybean prepared by the method of preparing the fermented soybean. A physiological active substance-enhanced fermented soybean prepared according to the present invention is capable of being used as materials for lactic acid bacteria concentrate, health food, beauty food, functional food such as tablet or capsule, medicine and medical supplies, and others.본 발명은 생리활성물질이 증진된 콩발효물의 제조방법 및 이를 통해 제조된 생리활성물질이 증진된 콩발효물에 관한 것으로써, 콩의 배아를 발아시키고 증자한 후, 유산균을 도입하여 발효함으로써 감마-아미노부틸산 및 이소플라본 등의 생리활성물질의 함량을 증진되고 항산화활성을 가지는 콩 발효물을 제조하는 방법 및 이를 통해 제조된 콩발효물을 제공하는 데 있다. 본 발명에 따라 제조된 생리활성물질이 증진된 콩발효물은 유산균제, 건강식품, 미용식품, 정제나 캡슐 등과 같은 기능성식품, 의약품 등의 소재로서 사용할 수 있다.
