PROBLEM TO BE SOLVED: To provide food extract bringing food-quality improving effect obtained through using phosphate derived from food raw material for improving quality of food.SOLUTION: The food extract bringing food-quality improving effect contains a chelating agent to inhibit generation of insoluble phosphate or make the insoluble phosphate soluble.
