The present invention relates to sweet jelly containing a citrus juice extraction cake and a method for producing the same. More specifically, the present invention relates to sweet jelly containing a citrus juice extraction cake having not only improved texture but also improved taste and nutrition using a citrus juice extraction cake wasted after citrus extraction and to a method for producing the same. The method for producing sweet jelly containing citrus juice extraction cake comprises the steps of: (a) producing a sweet jelly mixture by mixing agar, sugar, dregs, and water; (b) producing a citrus juice extraction cake-containing sweet jelly mixture by adding (i) a citrus juice extraction cake and (ii) a liquid citrus concentration or a citrus puree in the sweet jelly mixture in order to be mixed; (c) concentrating the citrus juice extraction cake-containing sweet jelly mixture; and (d) coagulating the concentrated citrus juice extraction cake-containing sweet jelly mixture. Sweet jelly having not only improved texture but also improved taste and nutrition is produced by utilizing a citrus juice extraction cake which is usually wasted as a citrus extraction byproduct, so that the development of the citrus industry can be promoted.본 발명은 감귤착즙박 함유 양갱 및 이의 제조방법에 관한 것으로, 더욱 상세하게는 감귤착즙 후 폐기되는 감귤착즙박을 이용하여 식감뿐만 아니라 맛과 영양성이 증대된 감귤착즙박 함유 양갱 및 이의 제조방법에 관한 것이다.상기 감귤착즙박 함유 양갱의 제조방법은 (a) 한천, 당, 앙금 및 물을 혼합하여 양갱 혼합물을 제조하는 단계; (b) 상기 양갱 혼합물에 (ⅰ) 감귤착즙박 및 (ⅱ) 감귤 농축액 또는 감귤 퓨레를 첨가하고 혼합하여 감귤착즙박 함유 양갱 혼합물을 제조하는 단계; (c) 상기 감귤착즙박 함유 양갱 혼합물을 농축시키는 단계; 및 (d) 상기 농축된 감귤착즙박 함유 양갱 혼합물을 응고시키는 단계를 포함한다.본 발명은 감귤 착즙 부산물로서 주로 폐기되고 있는 감귤착즙박을 재활용하여, 식감뿐만 아니라 맛과 영양성이 개선된 양갱을 제조함으로써, 감귤산업의 발전을 도모할 수 있다.
