The present invention relates to a method for manufacturing a fast-fermented bean paste, capable of reducing unpleasant smell by preventing activation of various germs using propolis and of preventing deterioration without a chemical preservative. Also, the method for manufacturing a fast-fermented bean paste can completely preserve the unique taste of a fast-fermented bean paste. According to the present invention, the method for manufacturing a fast-fermented bean paste ferments propolis during the process of manufacturing a fast-fermented bean paste and includes an antioxidant and immunity reinforcing matter in the fast-fermented bean paste by enhancing the antioxidant and immunity reinforcing matter. According to the present invention, the method for manufacturing a fast-fermented bean paste includes: a step of preparing soaked beans by soaking them in water； a step of preparing boiled beans by boiling them and removing moisture； and a step of fermenting the boiled beans for 3-4 days. In the fermenting step, 3-5 ml/L of a propolis solution in which water-soluble propolis is diluted with the water is sprayed onto the boiled beans.본 발명은 프로폴리스를 이용함으로써 잡균의 활성을 방지하여 불쾌취를 줄이고, 화학적 방부제 없이도 변패를 방지할 수 있는 청국장을 제공하되, 청국장 고유의 맛이 온전히 보존될 수 있는 청국장 제조방법에 관한 것이다.본 발명은 청국장 제조과정에서 프로폴리스가 발효되게 함으로써 항산화물질 및 면역증강물질이 증진되어 청국장에 포함될 수 있는 청국장 제조방법에 관한 것이다.본 발명은, 콩을 불려서 불린 콩을 제작하는 단계； 상기 불린 콩을 삶고 물기를 제거하여 삶은 콩을 준비하는 단계； 및 상기 삶은 콩을 3~4일 발효시키는 단계；를 포함하되, 상기 발효시키는 단계에서, 1일 1회 수용성 프로폴리스를 물에 3~5ml/L로 희석한 프로폴리스 용액을 상기 삶은 콩에 분사하는 것을 특징으로 하는, 청국장 제조방법에 관한 것이다.
