PURPOSE: A production method of a cinnamon supercritical extract is provided to offer excellent antibacterial activity especially to food poisoning bacteria. CONSTITUTION: Cinnamon is pulverized. The pulverized cinnamon is inserted into a supercritical extraction container, and supercritical fluid and an assistance solvent are flowed into the extraction container to touch the pulverized cinnamon for conducting supercritical extraction. The supercritical fluid and the assistance solvent are removed from the cinnamon supercritical extract. The supercritical fluid and is carbon dioxide or water. The assistance solvent is ethanol, methanol, acetone, hexane, ethyl acetate, or methylene chloride. The supercritical extraction is conducted at 30-50°;C in a pressure of 100-500 bar. The cinnamon supercritical extract contains cinnamaldehyde.본 발명은 계피 초임계 추출물의 제조방법 및 계피 초임계 박 추출물의 제조방법을 제공한다. 본 발명의 방법에 의해 제조된 계피 초임계 추출물은 현저한 항균 활성을 나타내며, 계피 초임계 박 추출물은 매우 우수한 자유 라디칼 소거활성을 나타낸다. 따라서, 본 발명의 추출물은 항균제 또는 항산화제의 활성성분으로 개발될 수 있다.
