We are Detailed process for extraction of anthocyanin from waste of Kokam, Processing industry. Byproduct or waste of a Kokam processing units is collected from different Kokam processing industries of Kokan region in Maharashtra. The waste samples were pre-treated with cell degradating enzymes to extract anthocyanin. The extracted anthocyanin was purified by column chromatography technique.
