PURPOSE: Squid mixed with spicy and sour sauce and vegetables having improved eating texture is provided to enable patients, children, and elderly to easily eat the squid.CONSTITUTION: Squid mixed with spicy and sour sauce and vegetables includes 40-55wt% of salted radish slices, 35-50wt% of salted squid, 3-10wt% of red pepper powder seasoning, 2-10wt% of garlic, 1-10wt% of roasted sesame seeds, 0.1-1wt% of ginger, and 0.01-0.1wt% of fermented stevia powder. The salted radish slices is obtained by mixing 85-90wt% of radish slices, 3-10wt% of salting liquid, and 1-6wt% of refined salt. The salting liquid contains brewing vinegar, glacial acetic acid, and the fermented stevia powder.
