PROBLEM TO BE SOLVED: To provide an extract whose astringent action is reduced, of a Rhodiola rosea plant having a strong astringent action, and to provide an extract according to the above extract, wherein a content of tyrosol as a functional component is efficiently increased.SOLUTION: There is provided a method for producing a Rhodiola rosea plant extract in which significantly reduced is astringent action, obtained by applying an enzyme treatment with enzymes having tannase activity to Rhodiola rosea which is a raw material, and in which significantly increased is deodorization effect, particularly deodorization effect on methyl mercaptan. And provided is the method for producing Rhodiola rosea plant extract in which significantly reduced is astriction obtained by applying an enzyme treatment with enzymes having &bgr；-glucosidase activity, and in which significantly increased is deodorization effect, particularly deodorization effect on methyl mercaptan, and which highly contains tyrosol as a functional component.【課題】 イワベンケイ属植物のもつ強い収斂作用を低減させた該植物のエキスを提供する。さらに、機能性成分であるチロソールの含有量を効率的に増加させた該植物のエキスを提供する。【解決手段】 イワベンケイ属植物を原料として、該原料をタンナーゼ活性を有する酵素を用いて酵素処理することにより得られる、収斂作用を顕著に低減させ、消臭作用、特にメチルメルカプタンに対する消臭作用を顕著に向上させたイワベンケイ属植物エキスの製造方法を提供する。さらに、β－グルコシダーゼ活性を有する酵素を用いて酵素処理することにより得られる、収斂作用を顕著に低減させ、消臭作用、特にメチルメルカプタンに対する消臭作用を顕著に向上させ、機能性成分であるチロソールを高度に含有する、イワベンケイ属植物エキスの製造方法を提供する。【選択図】なし
