PROBLEM TO BE SOLVED: To provide a food material having excellent emulsifiability in acid conditions, and an acidic food and beverage having excellent emulsion stability.SOLUTION: A food material including a defatted sesame product is used in an acidic food and beverage having an aqueous phase part with a pH of 4.5 or less and an oil phase part. An acidic food and beverage has an aqueous phase part with a pH of 4.5 or less and an oil phase part, containing a defatted sesame product.
