The present invention relates to rice cakes prepared by using lotus roots (Nelumbo nucifera) to be used to cook rice cake soup and a preparation method thereof. The rice cakes are prepared by mixing the lotus roots having a variety of nutrients and rich dietary fibers to enable a consumer to consume the lotus roots containing rich nutrients. The rice cakes do not easily harden at the room temperature to be easily cooked and consumed in a health manner on the spot. According to the preparation method, the preparation method includes the steps of: precipitating washed rice, removing the moisture from the rice, and grinding the rice for the first time to prepare rice powder； preparing lotus root powder by cutting washed lotus roots in 1.5-3 mm, drying the cut lotus roots, and grinding the lotus roots for the first time； mixing 95 wt% of the rice powder and 4 wt% of the lotus root powder ground for the first time； aging the mixture powder for the first time； grinding 50-60 mesh of the aged mixture powder for the second time； aging the twice-ground mixture powder for the second time； steaming the mixture powder aged for the second time； cooling the steamed mixture powder, adding the steamed powder in a mold, and shaping the cylindrical rice cakes； placing and naturally cooling the cylindrical rice cakes on a wicker tray to age the cylindrical rice cakes； and cutting and packaging the aged rice cake.본 발명은 다양한 영양소와 식이섬유소가 풍부한 연근을 혼합하여 떡국용 떡을 제조함으로써 영양소가 풍부한 연근은 섭취함과 아울러 상온에서 쉽게 굳어지지 않아 즉석에서 간편히 조리하여 편안하고 건강하게 먹을 수 있는 연근을 주제로 한 즉석 떡국용 떡 및 그 제조방법에 관한 것이다.본 발명은, 세척한 쌀을 침전시킨 후 쌀의 물기를 제거하고 1차분쇄하여 쌀가루를 준비하는 단계； 세척한 연근을 1.5~3mm로 절단하여 건조시킨후 1차분쇄하여 연근가루를 준비하는 단계； 상기 1차분쇄된 쌀가루와 연근가루를 쌀가루96중량%:연근가루4중량%로 혼합하는 단계； 상기 혼합가루를 1차숙성하는 단계； 상기 1차숙성된 혼합가루를 50~60매쉬로 2차분쇄하는 단계； 상기 2차분쇄한 혼합가루를 2차숙성하는 단계； 상기 2차숙성시킨 혼합가루를 찌는 단계； 상기 찐 혼합가루를 냉각시키고 성형기에 투입하여 가래떡을 성형하는 단계； 상기 성형된 가래떡을 채반에 올려놓고 자연냉각시키면서 숙성시키는 단계； 상기 숙성된 가래떡을 절단하여 포장하는 단계로 이루어진 것에 요지가 있다.
