The composition of claim 1, wherein the emulsifier contains at least about 95 weight% α-lactalbumin. The composition according to claim 1, wherein the emulsifier contains at least about 98 wt.% Α-lactalbumin. The composition of claim 1, further comprising at least one prebiotic. The composition according to claim 1, additionally containing vitamins and minerals. The composition of claim 1, further comprising at least one ω-6 fatty acid. A method of providing additional nutrition to a subject, comprising administering to the subject a food composition comprising: an emulsion containing docosahexaenoic acid, in which the emulsion is dispersed in an aqueous component containing at least one of the amino acid components selected from the group consisting of: arginine, arginyl-glutamine and alanyl-glutamine; emulsifier containing highly purified α-lactalbumin. 9. The method of claim 8, wherein the emulsifier contains at least about 95 wt.% Α-lactalbumin. The method of claim 8, wherein the emulsifier contains at least about 98 wt.% Α-lactalbumin.
