The invention relates to a method for protecting biological material in general and thermolabile substances, particularly useful in microorganisms and viruses and any other biological material, as well as in any substance, derived or otherwise, that requires protection to extend the useful life thereof or broaden the scope of use thereof, by electrohydrodynamic or aerodynamic processing.Said processing makes it possible to extend the useful life of the product in a unique manner, since exposing the substance to be protected to a temperature is not involved. In addition, depending on the features and variables used during the coating process, encapsulation makes it possible to maintain the viability of the product against stress conditions such as temperature, relative humidity or pH among others, offering effective protection during the subsequent preparation, processing and storage thereof, and even, for example, during the passage thereof through the gastrointestinal tract in the case of probiotic microorganisms.
