PROBLEM TO BE SOLVED: To provide an excellent method of freeze preserving fish eggs by using a liquid meniscus.SOLUTION: The method of freeze preserving fish eggs includes steps of: coating the external surface of fish eggs with a liquid meniscus formed by using hydrophily of an egg film of the fish egg next, slowly cooling the coated fish egg and thus freezing a part of the liquid meniscus in a porridge-like manner to fix and protect the egg film and then, rapidly-quenching and freezing the whole including the fish egg.
