PROBLEM TO BE SOLVED: To provide an emulsifying agent with an excellent emulsification performance using a natural raw material, and to provide a production method thereof, and cosmetics.SOLUTION: An emulsifying agent of the invention contains a cellulose nanofiber obtained by fibrillating a dispersed fluid of cellulose by high pressure injection treatment of 100-245 MPa. The mean fiber diameter of the cellulose nanofiber is 10-50 nm, and the solvent of the dispersed fluid is water. A cosmetic of the invention contains the emulsifying agent, water, and a natural vegetable oil, and the concentration of the cellulose nanofiber contained in the emulsifying agent is 0.1-1.0 wt.%.【課題】 自然原料としつつ、優れた乳化性能を有する乳化剤とその製造方法、及び化粧料を提供する。【解決手段】 本発明の乳化剤は、セルロースの分散流体を１００～２４５ＭＰａの高圧噴射処理により解繊することで得たセルロースナノファイバーが含有されている。前記セルロースナノファイバーの平均繊維径は１０～５０ｎｍであり、前記分散流体の溶媒は水である。本発明の化粧料には、前記乳化剤と水と天然の植物油が含有されており、前記乳化剤に含有されているセルロースナノファイバーの濃度が０．１～１．０ｗｔ％である。【選択図】 図２
