PROBLEM TO BE SOLVED: To provide a sulfated gellan having >80% hydroxy group esterified with sulfuric acid.SOLUTION: The gellan of a raw material is subjected to a strong acid condition by an acid such as hydrochloric acid and sulfuric acid to make the gellan a free body.
