A method for making smoked squid having new and pleasing characteristics of flavor and tenderness comprising the steps of: cleaning a squid (Sepioteuthis lessoniana, N. Norman) by washing in running tap water and removing the heads and internal organs of said squid, skinning said squid mantle using a very sharp knife, slicing said squid in 1" x 2" pieces, steaming said sliced squid for 10 minutes only, chilling steamed squid by soaking in cold water having a temperature of 0o-4oC at 10 minutes only, marinating said chilled steamed squid by soaking in prepared marinades for 1 hour, draining said marinated squid using a strainer, drying said squid until dry to touch and smoking said squid in a drum-type smoke house for 20 minutes.
