The present invention relates to a method for manufacturing red ginseng slices that can be easily taken in and maintain a pharmacological efficacy of red ginseng as it is. The red ginseng slice manufacturing method according to the present invention includes: a sorting step in which foreign matter is removed from fresh ginseng a washing step in which the sorted fresh ginseng is washed a red ginseng manufacturing step in which the washed fresh ginseng is preheated for 25 to 30 minutes at a temperature of 75 to 80C, steamed for 2 to 3 hours at a temperature of 85 to 90C, and post-aged for 10 to 30 minutes in a steaming machine, and the post-aged ginseng is subjected to primary hot air drying in a dryer at a temperature of 60 to 65C to a moisture content of 35 to 40%, and then is secondarily and naturally dried under the sun for 3 to 6 days to a moisture content of 15% or less a softening step in which the flesh of the red ginseng is softened by the dried red ginseng being placed on a wicker tray, placed in a wet sticky tank formed of ceramics, and subjected to steam-heating for 40 to 60 minutes at a steam temperature of 70 to 90C and a cutting step in which the softened red ginseng is turned into slices having a predetermined thickness. The red ginseng slices are obtained when the softened red ginseng slices with a moisture content of at least 15% are dried to a moisture content of 15% or less.본 발명은 홍삼이 갖고 있는 약리적 효능을 그대로 유지하면서 섭취가 용이한 홍삼 절편의 제조방법에 관한 것이다.즉, 본 발명은 수삼에 묻어 있는 이물질을 제거하는 선별공정과, 상기 선별된 수삼을 세척하는 세척공정과, 상기 세척된 수삼을 증숙기에 넣고 75~80℃의 온도에서 25~30분 예열, 85~90℃의 온도에서 2시간~3시간 동안 증숙, 10~30분 후숙한 다음 건조기에 넣어 60~65℃의 온도에서 함수량 35~40%로 1차 열풍건조하고, 햇빛에서 3일~6일 동안 수분함량 15% 이내로 2차 자연 건조하여 만들어지는 홍삼제조공정과, 상기 건조된 홍삼을 채반에 담아 도자기로 만들어진 습점탱크의 내부에 습점탱크에 재치시킨 다음 스팀 온도 70∼90℃에서 40∼60분간 스팀 가열하여 홍삼의 육질을 연질화하는 연질화공정과,상기 연질화된 홍삼을 일정 두께를 가지는 절편으로 만드는 절단공정과, 상기 수분이 15% 이상 함유되어 있는 연질화된 홍삼 절편을 함수율 15% 이내로 건조하여 완성하는 홍삼 절편의 제조방법을 특징으로 한다.
