PURPOSE: Producing apparatus and method of meat processed food using chicken is provided to improve the convenience and safety of producing steps for the food. CONSTITUTION: A producing apparatus of meat processed food using chicken comprises the following: a compressing unit(10) compressing chicken meat； a cutting unit(20) including plural cutters installed into the horizontal and vertical directions for cutting the chicken meat； a chopping unit(30) installed on the rear side of the cutting unit for chopping the cut chicken meat； a stirring unit(40) stirring the chopped chicken meat with sauce, and kneading； a molding unit(50) molding the chicken meat mixture into the edible size； a heating unit(60) heating the molded products； a water spraying unit removing foreign materials from the chicken； upper and lower rollers(11, 13)； and a drive motor applying power to the upper roller.본 발명은 제품을 일률적으로 제조하는 공정의 기계화로 작업의 편의성과 함께 생산성을 극대화하고, 제품의 휴대 및 보관이 용이하게 제조하여 장소 및 연령대를 불문하고 누구나 섭취하기가 용이하며 식품의 기호성을 도모함을 제공하도록, 닭의 비식용 부분이 제거된 닭 육의 상부에 회전운동가능하게 설치되고 닭 육에 접하여 가압하도록 형성되는 압착부와； 상기 압착부의 후방에 설치되고 길이 및 폭 방향으로 절단면을 형성토록 복수의 커터가 배치되어 닭 육을 자르는 절단부와； 상기 절단부의 후방에 설치되고 수직으로 상하운동을 반복하면서 압력을 가해 다지도록 형성되는 다짐부와； 내부에 닭 육을 수용하도록 상기 다짐부의 후방에 위치하고 양념을 혼합하면서 닭 육을 반죽하는 교반부와； 상기 교반부로부터 공급된 닭 육의 상부에 설치되고 식용이 용이한 크기 및 형상의 성형체를 이루도록 상하운동하며 찍어내는 성형부와； 상기 성형부의 후방에 위치하고 상기 성형체에 열을 가하여 구워내는 가열부；를 포함하는 닭을 이용한 육가공식품 제조장치 및 그 제조방법을 제공한다.
