Provided is a method for producing a carrot extract which contains Rg3 at a high concentration, undergoes discoloration to a reduced extent and has excellent color stability. A method for producing a carrot extract, said method comprising the steps of: (1) extracting carrot while heating in water at 95 to 100 DEG C for 0.5 to 50 hours； (2) adding ethanol to a thermal extract produced in step (1) in such a manner that the ethanol concentration in the extract becomes 60 to 90 vol%, and then removing precipitates to produce a crude carrot extract； and (3) purifying the crude carrot extract produced in step (2) in an adsorption column filled with a macroporous resin.本發明提供一種以較高之濃度含有Rg3，著色減少，且色穩定性優異之人參萃取物之製造方法。本發明之人參萃取物之製造方法包括下述步驟(1)~(3)：(1)將人參於水中以95~100℃加熱萃取0.5~50小時之步驟；(2)對(1)中所獲得之加熱萃取物以乙醇濃度成為60~90體積%之方式添加乙醇，去除沈澱物而獲得粗人參萃取物之步驟；及(3)藉由填充有巨孔樹脂之吸附管柱將(2)中所獲得之粗人參萃取物進行精製之步驟。
