PROBLEM TO BE SOLVED: To provide a method for determination of fattening state and finishing time of edible mammals, capable of objectively determining the fattening state and the finishing time of edible animals on fattening, especially of a cattle fattening, and linking to proper rearing management and feed cost decrease. SOLUTION: The method for determination of fattening finish includes determining the fattening state and the finishing time of edible animals based on the molecular species composition of triacylglycerol in the body of an edible mammal on fattening. Preferably, determination is performed by analysis of changes in fattening and of molecular species of the triacylglycerol and, specifically preferably, by combining two kinds of molecular species of plural triacylglycerol species detected in analysis of the fat from the mammal organism and regarding one of the two molecular species to be X and the other species to be Y, the determination is performed based on a graph obtained by XY-plot of the two molecular species on two-dimensional coordinate axes comprising X-axis and Y-axis.
