A method of manufacturing a soluble granule of coffee flavoring substance, comprising combining spray-dried coffee flavoring substance with a process flavor obtained from the Mayyard reaction and caramel sugar to form a fine powder, suspending this powder in a fluidized bed and spraying it with an aqueous solution of a saccharide binder .2. The method of claim 1, wherein the binder is at least a disaccharide. The method of claim 1, wherein the binder is a polysaccharide, preferably arabian or xanthan gum. A method according to claim 1, wherein the concentration of the saccharide is such that it can be sprayed, but it will not agglomerate the mixture.
