FIELD: food industry.SUBSTANCE: inventions group relates to food industry. One performs the stage of coffee-based composition agglomeration where the greater weight part of the composition consists in foaming instant coffee particles where approximately 50-100 wt % of such foaming instant coffee particles do not undergo milling prior to agglomeration. The said particles with multiple closed pores filled with compressed gas are produced by way of heating dry instant coffee under a pressure sufficient to force gas to fill inner pores of dry instant coffee with subsequent cooling of heated dry instant coffee and pressure drop in cooled coffee. The stage of the coffee-based composition agglomeration involves heating of the coffee-based composition at a temperature exceeding the glass transition temperature of the coffee-based composition by 5-30°C for formation of agglomerates. The foaming coffee-based agglomerated composition has foam volume equal to at least 2.0 cm3 in 1 minute and(or) at least 0.7 cm3 - in 10 minutes such volume measured using the method of quantitative testing for foaming in a cup and(or) in 10 minute the composition has foam volume equal to at least equal to at least 40% of foam volume in 1 minute and(or) the composition has a volume of closed pore space equal to over 0.3 cm3/g.EFFECT: inventions group allows to manufacture a product with preservation of significant foaming capacity that easily dissolves during reconditioning with hot water.14 cl, 2 tbl, 5 exГруппа изобретений относится к пищевой промышленности.
