PROBLEM TO BE SOLVED: To provide a thickening composition increasing the viscosity of food, and inhibiting reduction in the viscosity of food even when subjected to retort sterilization, to provide liquid-containing food containing the composition, and to provide a method for producing the food.

SOLUTION: The thickening composition contains: modified xanthan gum obtained by heating xanthan gum and starch comprising at least one of potato starch, tapioca starch, waxy corn starch, chemically-modified starch thereof, sweet potato starch, arrowroot starch, bracken starch, lotus starch, glutinous rice starch, nonglutinous rice starch, nonglutinous rice flour, and glutinous rice flour.
