The present invention relates to a duck oil sauce, and to a preparation method thereof. The duck oil sauce has a new composition which can be used to cook a dish having excellent flavor and nutrition. The duck oil sauce is composed of duck oil and sesame oil, and is used to stir-fry vegetables or roast a meat. The preparation method of a duck oil sauce comprises: a process of detaching fat parts from a duck meat; a process of washing the fat parts detached from the duck meat; a process of inserting the washed fat parts of the duck meat in water, and boiling the same; a process of cooling the resultant product; a process of removing duck oil floating at the top from the cooled product; and a process of mixing 1-3 parts by weight of sesame oil to 100 parts by weight of duck oil removed from the previous process.본 발명은 풍미가 우수하고 영양도 높은 요리를 할 수 있는 새로운 조성의 오리기름 소스 및 그 제조방법에 관한 것으로서, 본 발명은 오리기름과 참기름을 포함하여 이루어져서, 야채를 볶거나 또는 고기를 구울 때 사용된다.
