The invention provides a method for producing a frozen product comprising a solid matrix throughout which particulates are distributed using an apparatus comprising at least one compartment which is rotatable about an axis. The method comprises the steps of adding to the compartment a liquid to be frozen to form the matrix and particulates to be distributed therein, reducing the temperature around the compartment to a temperature below the freezing point of the liquid, rotating the compartment about the axis while at least some of the liquid freezes within the compartment trapping at least some of the particulates within the frozen matrix and removing the frozen product from the compartment.L'invention concerne un procédé de production d'un produit congelé comprenant une matrice solide dans laquelle des particules sont réparties à l'aide d'un appareil comprenant au moins un compartiment pouvant tourner autour d'un axe. Le procédé comprend les étapes consistant à introduire dans le compartiment un liquide devant être congelé pour former la matrice et des particules devant être réparties à l'intérieur de celle-ci, à réduire la température régnant autour du compartiment jusqu'à une température inférieure au point de congélation du liquide, à faire tourner le compartiment autour de l'axe tandis qu'au moins une partie du liquide gèle à l'intérieur du compartiment piégeant ainsi au moins certaines des particules à l'intérieur de la matrice congelée et à retirer le produit congelé du compartiment.
