The present application relates to sugar mixtures comprising: monosaccharides, wherein the monosaccharides comprise a pentose in a ratio to total saccharides ‰¥ 0.05; and oligosaccharides in a ratio to total saccharides ‰¥ 0.06, wherein the oligosaccharides comprise disaccharides in a ratio to total saccharides ‰¥ 0.05, wherein the disaccharides comprise at least one alpha-bonded di-glucose and at least one beta-bonded di-glucose; and in particular methods for producing such sugar mixtures by acid hydrolysis of lignocellulosic material.
