PROBLEM TO BE SOLVED: To provide a thermostable lysozyme exhibiting activity at high temperatures.
SOLUTION: The thermostable lysozyme has a specific amino acid sequence derived from a bacteriophage &PhiIN93 infected with a thermophilic bacterium Thermus aquaticus or the thermostable lysozyme has an amino acid sequence in which one or a plurality of amino acids are substituted, deleted or added in the sequence and exhibits thermostable activity. Furthermore, a gene has a specified base sequence encoding the amino acid sequence of the enzyme. The thermostable lysozyme exhibits the good activity under high temperature conditions such as 60-120°C reaction optimum temperature and is suitably used for sterilization, etc., under the high-temperature environment.
