PURPOSE: A beverage extracting device and method are provided to easily extract beverage from a capsule by supplying liquid through the top cover of the capsule and discharging beverage through the bottom of the capsule. CONSTITUTION: A beverage extracting device comprises a tray(241) in which a capsule is placed, a cap(231) fitted to the top of the tray, a liquid supply punch(233) provided at the cap to open the capsule and supply liquid, a discharge punch(242) protruding through the tray and opening the capsule to discharge beverage, a cavity(243) collecting beverage under the tray, and an opening and closing unit which opens and closes the discharge path of the beverage.본 발명은 커피분말이나 차원료, 한약재 등이 충진되는 캡슐을 이용하여 음료를 추출하는 장치 및 방법에 관한 것으로서, 보다 상세하게는 캡슐 상부에 부착된 커버를 통해 액체를 공급하고 캡슐 몸체의 하면을 통해 음료를 추출할 수 있는 음료 추출장치 및 방법에 관한 것이다. 본 발명에 의한 음료 추출장치는 캡슐이 안착되는 트레이； 상기 트레이의 상부에 밀착되 캡； 상기 캡에 구비되며, 상기 캡슐을 개구하고 액체를 공급하는 액체공급펀치； 및 음료를 토출할 수 있도록 상기 캡슐을 개구하는 토출펀치；를 포함한다.
