tunisia, like all the countries of the mediterranean, is faced with the problem of the disposal of by-products generated by the plants. in fact, the vegetable water are important to the high pollutant load of organic matter, the acidity and the toxicity of the effluent, which prohibits its treatment in urban sanitation satations as wastewater.several studies have been develop\u00e9es in idff\u00e9rents olive oil producing countries, the objective of which is to make the effluent and to eliminate the risk of pollution. because of the richness of the vegetable water of phenolic compounds, recent studies have reported the inhibition of microorganisms by the marignes.in this context, it is for the interss\u00e9 compounds responsible for the antimicrobial activity of vegetable water. they underwent different treatment, centrifugation, ultrafiltration, heat) in order to obtain low out a sterile product capable of controlling agent phytophathog\u00e8ne agrobacterium tumefaciens.the propri\u00e9tg\u00e9s anticabt\u00e9riennes of vegetable water remained after these treatments, the phenolic extracts were effective in the same tes\u00e9s cacb\u00e9rie have low dose (20 ).the indetification by gc \/ ms of the compounds in the fractions were salvaged by hplc showed that the majority hydroxytyrosol phenolic extract, element, is responsible for the antibacterial activity of vegetable water.la tunisie comme tous les pays méditerranéens, est confrontée au prolème de lelimination des sous produits generes par les huileries. En effet, les margines présentent un pouvoir polluant important du a la forte charge en matière organique, lacidité et la toxicité de cet effluent, ce qui interdit son traitement dans les satations dassainissement urbain en tant queaux usées.
