PROBLEM TO BE SOLVED: To provide a total nutritional food having shape retainability even after baked, capable of ameliorating the PEM (protein energy malnutrition) of patients suffered from cirrhosis such as those suffered from chronic hepatic failure accompanied by hepatic encephalopathy, usable as a LES (late evening snack) as well, and also enabling energy intake, by containing three kinds of branched-chain amino acids as active ingredients, in the form of baked confectionery, obtained by compounding the three kinds of branched-chain amino acids, i.e. isoleucine, leucine and valine, with dietary fibers and at least one protein material, i.e. casein sodium and/or concentrated soybean protein.
SOLUTION: The total nutritional food containing branched-chain amino acids includes 3.0-4.5 g, per 100 kcal of the branched-chain amino aids, at least one protein material, i.e. casein sodium and/or concentrated soybean protein, and dietary fibers wherein the protein is 20-26 energy% the lipid is 15-35 energy% the shape retainability index after baked is 1.0-1.2 and the moisture content is 3-10 wt.%.
