PROBLEM TO BE SOLVED: To provide a cutting blade rationally and massively producing noodle lines with a sharp cut edge no less than those cut with a kitchen knife regardless of the cutting blade by rotation of a single cutting blade roller.SOLUTION: The cutting blade for handmade-like noodles employs: a cutting blade including a single cutting blade roller formed by alternately inserting annular circular blades and spacers into a rotary shaft and clamping both ends, a receiving roller rotating in a direction of clamping a noodle ban, and a scraper formed by molding a side face of the cutting blade roller using a curable material or molded by using the side face itself of the cutting blade roller as a mold a cutting blade in which a single cutting blade roller and a receiving roller are rotated in a direction of clamping the noodle band, and that includes a noodle band pressing roller for clamping the noodle band before cutting between itself and the receiving roller, where a circumferential velocity of the noodle band pressing roller is equivalent to the circumferential velocity of the receiving roller and the circumferential velocity of the cutting blade roller is faster than the circumferential speed of the receiving roller and a cutting blade formed by combining both cutting blades with each other.COPYRIGHT: (C)2016,JPO&INPIT【課題】単一の切刃ローラの回転による切刃でありながら、包丁切りに劣らない鋭利な切り口の麺線を合理的に量産する。【解決手段】環状の円形刃とスペーサを回転軸に交互に通して両端を挟着する単一の切刃ローラと受けローラが、麺帯を挟み込む方向に回転し、硬化性素材により切刃ローラの側面を型取りし、又は切刃ローラの側面そのものを型として、成型されたスクレーパを含む切刃や、単一の切刃ローラと受けローラが麺帯を挟み込む方向に回転し、受けローラとの間で細断前の麺帯を挟み込む麺帯押えローラを備え、該麺帯押えローラの周速が該受けローラの周速と同等で、該切刃ローラの周速を該受けローラの周速より速くする切刃や、それらを組み合わせた切刃を用いる。【選択図】図8
