Beschrieben wird ein Verfahren zum Erzeugen einer Zusammensetzung umfassend die Anthocyane Delphinidin, Cyanidin, Petunidin, Peonidin und Malvidin in glykosidisch gebundener Form, mit folgenden Schritten: (a) Herstellen oder Bereitstellen (b) Trennen (i) des Saftes bzw. (ii) des Extraktes bzw. (iii) sowohl des Saftes als auch des Extraktes, so dass in den Fällen (i) und (ii) eine jeweilige Mischung und im Fall (iii) zwei Mischungen gebildet werden, von denen zumindest eine bezogen auf die jeweilige Gesamtmasse an Trockensubstanz an den glykosidisch gebundenen Anthocyanen Delphinidin, Cyanidin, Petunidin, Peonidin und Malvidin angereichert und an Zuckern abgereichert ist, wobei das Verhältnis der Gesamtmassen der glykosidisch gebundenen Anthocyane Delphinidin, Cyanidin, Petunidin, Peonidin und Malvidin in den Fällen (i) und (ii) in der jeweiligen Mischung bzw. im Fall (iii) in der Gesamtheit der zwei Mischungen im Bereich (3 - 8) : (1,8 - 6) : (0,5 - 5) : 1 : (0,5 - 5,5) liegt.Producing a composition comprising anthocyanins delphinidin, cyanidin, petunidin, peonidin and malvidin in glycosidically bound form, comprises: (a) preparing or providing (i) a juice, (ii) an extract or (iii) a mixture of juice and extract； and (b) separating (i), (i) or (iii) so that, in the cases of (i) and (ii), a respective mixture is formed and enriched based on the total mass of each dry substance in anthocyanins delphinidin, cyanidin, petunidin, peonidin and malvidin, and, in case of (iii), two mixtures are formed in which at least one mixture is enriched.
