The present invention relates to a method of growing germinated coffee beans, in which coffee beans are immersed and germinated in distilled water which is mixed with acer mono sap. The method of growing germinated coffee beans comprises: a first sterilization step of sterilizing coffee beans placed on a net by immersing the same in ozone water contained in a first tank； a first washing step of, when the first sterilization is completed, washing the coffee beans by spraying high pressure air； a second sterilization step of, when the first washing is completed, sterilizing the coffee beans by immersing the same in tap water contained in a second tank； a second washing step of, when the second sterilization is completed, washing the coffee beans by spraying high pressure air； a germination step of, when the second washing is completed, immersing and germinating the coffee beans in mixed water, in which acer mono sap and distilled water are mixed, contained in a third tank； and a third washing step of washing the germinated coffee beans by repeatedly dipping the same in and out of clean water contained in a fourth tank.
