PROBLEM TO BE SOLVED: To provide a gelling agent which is used for aqueous solutions and from which aqueous solution gels good in transparency and a shape-retaining property can easily be produced.
SOLUTION: Provided is the gelling agent for the aqueous solutions (C), comprising the reaction product of a cross-linking agent (B) with a substituted gelatin (A) in which the protons of the carboxyl groups of the gelatin are replaced with an onium cation. The gelling agent for the aqueous solutions can be used to obtain an aqueous solution gel which has good transparency and a good shape-retaining property and can easily be handled on the production of the aqueous solution gel. The aqueous solution gel is used to obtain a deodorizing and/or flavoring agent.
